Macerated Strawberry Salad

CSA members were able to pick a quart of perfect strawberries at this season’s first share pickup… yum!  Most of us think about strawberries just as a nice, sweet treat — which they certainly are :) But, they also offer a nice nutritional profile, including the antioxidants vitamin C and manganese, dietary fiber for blood sugar maintenance to happy digestion, and phytonutrients that help prevent unwanted inflammation.  Strawberries are fantastic eaten fresh and raw, but we also love Mikaela’s simple Macerated Strawberry Salad:  Check it out on the Blooming Glen Farm blog by clicking here.
