Belonging to a CSA has lots of benefits, but one that we don’t always consider is that it can put you out of your comfort zone and encourage you to be a little more adventurous in the kitchen. Eggplant was previously a veggie that I found difficult, if not impossible to prepare, and so I avoided. After receiving it in our share each season, though, I set off to find a way to really enjoy this pretty purple vegetable.
